Description: Join us as CEJS Faculty Fellows Dr. Quan Le; Associate Professor, Department of Economics at Albers School of Business and Economics, and Dr. Shiny Abraham; Assistant Professor, Department of Electrical and Computer Engineering present their research. Dr. Le will discuss the collaboration of Seattle University and Nicaraguan smallholder cooperatives in bringing the Fair Trade and Organic Coffee Café Ambiental to campus and the broader community. Dr. Abraham’s talk will focus on the use of Internet of Things (IoT) technology to build and deploy smart, connected sensors that provide continuous monitoring of air, water, and soil quality. Corrigan worked in India on K12 education and with global issues in 2009 when she connected with Barefoot College. Description: CEJS is a proud sponsor of this year's Washington Higher Education Sustainability Conference (WAHESC). WAHESC is a regionally-focused opportunity for those teaching, working, or studying within higher education to come together and learn about sustainability in academics, operations, and research. Participants will explore ways to advance campus sustainability through the sharing of best practices, presentations on creative solutions to common challenges, and the development of regional collaborative networks. Description: SU students: Join Bon Appetit executive chef Christine Keff and sustainability fellow Caroline Ferguson, the Health and Wellness Crew, CEJS, and the Health and Wellness Learning Community for a FREE cooking class. In honor of National Food Day we will be learning recipes and techniques for cooking with plant-based proteins like beans, tofu, lentils, nuts, and whole grains. These are nutritional powerhouses with a much smaller footprint than meat. While we enjoy Chef Keff's dishes, we'll learn about the nutritional value of plant-based proteins and how we can make dietary choices that are gentle on the planet.
